Stockholm’s fine dining scene has exploded over the last decade: Restaurants like Volt, F12, and Mathias Dahlgren offer spectacular New Nordic fare with the wine lists to match, and a particular emphasis on vins naturels.But it’s been tricky to get a decent glass in the city without a multi-course tasting menu on the side—chilly Scandinavia is, of course, not a grape-producing region with the wine drinking culture of its Euro cousins, and all bars in Sweden are obliged to serve food, which has meant that wine has rarely been the focus.That’s what makes Gaston, which opened in Stockholm’s medieval old town a couple of months ago, so exciting. A sister to the excellent Frantzèn restaurant across the street, Gaston has a quintessentially Scandinavian look: Slatted wooden walls, a marble-topped, bronze-backed bar, Iitalia candlesticks; about 400 wines by small producers in France, Germany, Austria, Italy and California, and a chilled, friendly vibe that makes it the perfect place to wait, and wait, for sunset (around 10 p.m. at this time of year).

Sommeliers Johan Agrell, whose last gig was at the legendary Fäviken Magnisset restaurant, seven hours north of Stockholm, and Fredrik Lundberg, who oversaw Sweden’s largest wine cellar at PM & Vänner, wander the bar asking guests what they like and pour accordingly. My favorite was a glass of 2011 Maggiorina, from Boca, Italy, made with grapes from trailing vines.
