Certified Angus Filet Mignon was requested as rare, but arrived a little too rare...a minor issue. My wife and I have lived in Carlsbad for the past 16 years and love it. But, we have almost always ended up going south for a dining celebration. That ended two nights ago. For our 50th wedding anniversary, we decided to take a chance with Paon, mostly because of several of our friends' recommendations, and, we didn't want to... George, our water, was excellent. Our rack of lamb $49 was excellent and the kitchen was willing to substitute a side for us. The veal sweetbreads $19 were well sized and very good, but could have used more seasoning.

The restaurant has an admirable wine list and the corkage fee is a reasonable $20. Optional foie gras was priced at... We always go to the bar and eat from the bar menu. Escargot is the best value, and my favorite. Always great service by experienced bartenders and an excellent wine selection. The food was delicious and the service was outstanding!! Their wine list offers an extensive selection. We have been there often and tried various dishes including their deserts and continue to be impressed. Their servers are outstanding, especially Andrew! They also have a wine bar next door for wine by the glass or bottle. There is not one thing that this restaurant doesn't do well. They have an excellent wine list offering a nice selection by the glass. From the escargot appetizer to the Pheasant as a main course, the food here is without question the best fine dining in Carlsbad. For the same menu but for a casual fare, eat at the bar.... This place has one of the BEST bar menus in town.

He was wanting French cuisine so we decided on lunch. The lunch menu didn't have some of the items that were on the dinner menu and our son was wanting (craving) Escargot, so we asked our server if it was possible to get both the Escargot and Sweetbreads as an appetizer. So this place does have a secrete menu and the will serve certain items not on the menu.
